I may have mentioned recently that some lovely Yummies at Bella Sun Luci sent me a box of their delicious sun dried tomato goodies to play with. Kind of amazers how one bite of this sweet and savory little product can take you from a snow-packed February to the lush lit hills of Italy…okay so maybe it just took me from my doorstep to my kitchen, but either way it tasted like summer.

To kick off our upcoming series on Bella Sun Luci's sun dried tomatoes I present - Bruschetta Fries!

Hey, if you can put it on bread, you can put it on fries and make it even more FABU!

4 cups of freshly cut fries (or one bag of frozen)
1 tbsp sea salt
1 tbsp dried italian seasoning (basil and/or oregano works great)
1 tsp black pepper
1 tbsp garlic powder
1 tsp red pepper flakes
1 jar of Bella Sun Luci Bruschetta topping
1 tbsp olive oil
1 cup of shredded mozzarella cheese


  1. Preheat your oven to 400
  2. Lay the fries out on a cookie sheet
  3. Mix all of the spice together in a small bowl or cup
  4. Sprinkle the spice mix over the raw/frozen fries
  5. Bake the fries at 400 for 20-30 minutes, until they brown and crisp
  6. Warm the bruschetta topping in a pan with 1 tbsp of olive foil to help thin it out a little bit
  7. Remove the fries from the oven
  8. Pour the warm bruschetta topping over the fries
  9. Add the cheese to the top and slide the dressed fries back into a warm oven for 2-3 minutes to let the cheese melt
