There's something insanely comforting about meatloaf, but the whole ketchup and ground beef thing is tired. With all the amazing flavors sitting in our fridge we couldn't resign ourselves to ketchup. So we went a lil' nuts.

We built a turkey meatloaf then drowned it in a homemade cilantro lime aioli. An aioli is basically a fancy word for cream sauce. Much like mayonnaise, aioli is made with raw egg and oil, but thinner.  Don't be intimidated aioli is really quite simple and the fresh taste is well worth the time.

Here we go Yummies. Have a delicious day!

1.5lb of lean ground turkey
1 large egg
1/2 cup of italian bread crumbs
1 tsp sea salt
1 tsp black pepper
1 tsp garlic powder
1 diced yellow onion
1 tbsp olive oil

For the aioli…
1 bunch of cilantro leaves
1 lime juiced
1 large egg
1/2 tsp salt
1 cup of olive oil

1 Roma tomato sliced for garnish

  1. Preheat your oven to 375 degrees
  2. Add the onion and 1 tbsp of olive oil to a frying pan and cook until the onion is translucent
  3. Add the ground turkey, egg, bread crumbs, spices and cooked onion to a large bowl and mix together into a loaf
  4. Add the meat to a loaf dish or wrap in foil and set in baking dish
  5. Bake the loaf at 375 for 30-45 mins (the center should reach 160 degrees when fully cooked)
  6. Let the loaf sit and prepare the aioli
  7. Add the cilantro, lime juice, sea salt and egg to a food processor and begin to pulse
  8. Slowly pour in the olive oil and pulse until smooth
  9. Pour the aioli over the turkey meatloaf and garnish with sliced fresh Roma tomatoes
