Time to put away that tired old pound cake. Some brilliant Yumologists over at Knead to Cook have pinned a doozie of a Christmas bread recipe, complete with a rum glaze - say WHA?!?!?

Egg Nog Loaf

2 eggs
1 1/2 cups of egg nog (not low fat)
2 tsp spiced rum
1 cup white sugar
1 tsp vanilla extract
1/2 cup room temp butter
2 1/4 cup all purpose flour
1 pkg instant French vanilla pudding mix
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg


  • Preheat oven to 350 and spray loaf pan with non-stick spray
  • Using an electric mixer mix eggs, egg nog, rum, sugar, vanilla and butter in a large bowl
  • The butter should remain somewhat clumpy, not to worry
  • In another bowl sift together the flour, pudding mix, baking powder, salt and nutmeg
  • Slowly (in 3 portions) add the dry mixture to the wet and mix together well
  • Avoid over mixing by making sure the butter remains somewhat clumpy, it will melt into pockets while cooking
  • Divide your dough into the pans of your choosing
  • Bake in a regular loaf pan for 45-55 minutes


Rum Glaze

1 cup sifted confectioners sugar
2 tsp egg nog
2 tbsp spiced rum
1/8 tsp of ground nutmeg


  • Whisk all of the ingredients together until smooth
  • Pour over cooled egg nog loaf
