We admit we've been a little salmon crazy lately. It's hard not to be when you read about the antioxidants, omega 3s and heart healthy value that resides in just one filet.

Salmon is a powerful, flavorful fish and there are so many fun ways to dress it up. For example…

2, 1/2 lb salmon filets
2 tbsp honey
1/4 cup olive oil
1/4 cup orange juice
1 tsp minced ginger root (it appears like a paste)
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp dried parsley

  • Wash and pat dry the raw salmon filets.
  • Add the honey, olive oil, ginger and orange juice to a bowl and whisk together.
  • Mix together the salt, pepper, garlic powder and parsley, add to the bowl.
  • Roll each salmon filet in the dressing.
  • Place the salmon on a baking sheet and into a cold oven.
  • Bake in the oven at 400 degrees for 25 minutes.
  • Salmon should be flaky and tender.

You can also make extra dressing to pour on top of the fish as a sauce after it has baked. It's delicious either way.
