Creamy Mashed Cauliflower Recipe
8 cups of cauliflower florets
4 crushed garlic cloves
1/3 cup non-fat buttermilk
4 tsp extra virgin olive oil
1 tsp margarine
1/2 tsp salt
Pepper to taste
Chives to garnish

  • Steam/boil the cauliflower florets until soft.
  • Add cauliflower and garlic to food processor/blender with buttermilk, olive oil, margarine, salt and pepper and pulse until smooth.
  • Garnish with chopped chives and enjoy!
